Ingredients
- (4 lbs) Flying 4F Ranch Akaushi bone-in short ribs
- (To liking) Kosher salt and freshly ground black pepper
- (1/3 cup) All-purpose flour (optional, for a richer sauce)
- (2 tbsp) Olive oil
- (1) Large sweet onion, diced
- (3) Carrots, cut into large pieces
- (3) Celery stalks, chopped
- (5) Garlic cloves, minced
- (3 tbsp) Tomato paste
- (2 cups) Dry Cabernet Sauvignon or Pinot Noir
- (2 cups) Beef broth
- (2 tbsp) Balsamic vinegar
- (3 sprigs) Fresh thyme
- (1 sprig) Fresh rosemary
- (1) Bay leaf
- (3 lbs) Yukon Gold potatoes, peeled and cubed
- (1 whole head (or 5 cloves gently simmered with potatoes)) Roasted garlic
- (1/2 cup) Unsalted butter, softened
- (1/2 cup) Sour cream, room temp
- (1/2 cup) Heavy cream, warmed
- (To taste) Kosher salt and black pepper

Directions
- Prepare the Short Ribs Preheat oven to 325°F. Pat the Akaushi short ribs completely dry. Season generously with salt and pepper. For a slightly thicker finished sauce, lightly dredge each rib in flour, shaking off any excess. Heat olive oil in a large Dutch oven over medium-high heat. Working in batches, sear the ribs until deeply browned on every side, about 10-12 minutes total. Transfer ribs to a plate.
- Build the Braising Base Reduce heat to medium. Add onion, carrots, and celery to the Dutch oven. Cook 6–8 minutes until softened. Stir in garlic and tomato paste. Cook for another 1–2 minutes until fragrant. Pour in the red wine, scraping up every flavorful browned bit from the bottom of the pot. Simmer until reduced by about half. Then add beef broth, balsamic vinegar, thyme, rosemary, bay leaf. Bring to a gentle simmer.
- Braise Low and Slow Nestle the short ribs back into the Dutch oven, bone-side down or slightly angled into the liquid. The liquid should come about halfway up the ribs. Cover tightly. Bake for 2½–3 hours, or until the meat easily pulls apart with a fork.
- Finish the Sauce Transfer the ribs to a platter and tent loosely with foil. Discard the herbs. Skim excess fat from the braising liquid. Bring the sauce to a boil on the stovetop and simmer 10-15 minutes until slightly thickened and glossy. Taste and adjust seasoning.
- To Serve Spoon a generous mound of garlic mashed potatoes onto each plate. Top with one or two Flying 4F Ranch Akaushi short ribs. Ladle the rich red wine sauce over the ribs and potatoes.
